Ingredients
6 mini sweet peppers
1/2 cup low-fat cottage cheese
2 tablespoons chopped chives
Salt and pepper to taste
Directions
Cut tops off mini sweet peppers and remove seeds.
In a bowl, mix together low-fat cottage cheese, chopped chives, salt, and pepper.
Spoon cottage cheese mixture into each pepper half.
Serve chilled.
