Protein Pancakes with Blueberry Compote

Ingredients
1/2 cup rolled oats
1 scoop protein powder
1/2 cup low-fat cottage cheese
2 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 cup fresh blueberries
1 tablespoon maple syrup
Directions
In a blender, combine rolled oats and protein powder and blend until flour like consistancy.
Add in cottage cheese, eggs, vanilla extract, and baking powder. Blend until smooth.
Heat a non-stick skillet over medium heat and coat with cooking spray.
Pour pancake batter onto the skillet to form pancakes.
Cook until bubbles form on the surface, then flip and cook until golden brown.
In a small saucepan, heat blueberries over low heat with maple syrup until they release their juices and form a compote
Top pancakes with blueberries and enjoy!
