Buffalo Chicken Mac & Cheese
Creamy, cheesy, spicy and packed with protein, this Buffalo Chicken Mac and Cheese is the ultimate comfort food made a little more macro-friendly. Using my High-Protein Alfredo Sauce as the base gives this recipe a creamy sauce while adding extra protein.

This recipe is a regular feature in my weekly meal planning. It is suitable for meal prepping and can be savored throughout the week. Ensuring that your meals are simple to prepare will help you maintain consistency in your nutrition goals!
Buffalo Chicken Mac & Cheese
Ingredients
3 cups cooked chicken breast, shredded or diced
3 cups cooked pasta
½ cup buffalo sauce
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ tsp garlic powder
½ tsp onion powde
Salt and pepper to taste
Green onions, sliced, for topping
Extra buffalo sauce, optional
Directions
Prepare the High-Protein Alfredo Sauce by adding the cottage cheese, Parmesan, cream, garlic and Italian seasoning to a blender. Blend until smooth and creamy. Season with salt and pepper to taste.
Cook your pasta according to the package directions. Drain and set aside.
In a large saucepan over medium-low heat, add 2 cups of the High-Protein Alfredo Sauce and the buffalo sauce. Stir until combined and warmed through.
Add the cooked chicken and pasta to the sauce and stir until everything is well coated.
Add the cheddar and mozzarella and continue stirring until the cheese has melted and the mixture is creamy. If the sauce is too thick, add a small splash of milk until you reach your desired consistency.
Serve immediately topped with sliced green onions and an extra drizzle of buffalo sauce.

The High-Protein Alfredo Sauce does a lot of the heavy lifting here, giving you that creamy mac and cheese texture while adding protein. Add chicken and a higher-protein pasta and suddenly your favourite comfort food becomes a meal that can actually help you hit your goals.
